Leave out of fridge for 1 hour before cooking. Season meat well. Sear first in oiled pan, keep juices for sauce or gravy.
Grill or roast for 25  mins per 500 grams in 180 degres celcius oven or bbq. Rest for 10 mins covered in foil, then serve
