Combine fresh lemon zest, grated parmesan, 1 egg, teaspoon mustard, chopped basil, chopped olives, salt & pepper to taste, grated onion with chicken and form into balls. Refridgerate for a couple of hours then cook in tomato sauce in casserole for 1 hour.
