Dry skin of roast, rub with salt, roast @ 250 C for 20 mins, reduce to 180 C & roast for 55 mins per kilo. Cover with foil & rest for 20 mins.
Try baking some fresh fruit with your pork, Pears, Apple, Apricots. Once baked cool & puree to make a sauce to serve with pork
