At Craig's Butchery we do all our own smoked and cured products
on the premises. These include:
- Smoked Ham
- Smoked Chicken Breasts
- Smoked Whole Chickens
- Smoked Speck
- Smoked Ham Hocks
- Smoked Cabanossi
...and many more products.
Our process uses a European style of production which allows for very little processing. In other words our products are produced using very little additives or chemicals.
We use Natural wood Smoke in our smoking process (not a smoke essence like some manafactures use), which gives our product a more natural colour and taste.
Our cure contains no chemicals which trap the water molecules within the product to increase the product weight. Have you ever noticed the water eminating from your whole or sliced ham? This is the water molecules being released when the ham is cut or sliced. Did you know you are paying for this water in your purchase price? Our ham contains no trapped water molecules therefore you get a drier ham which keeps better and tastes more natural.
