- 6 Chicken breasts skin on
- 50 gram butter
- fresh chopped flat leaf parsley
- 1/4 preserved lemon
- 2 cloves garlic crushed
- Combine ingredients and rub under the skin of the chicken breast, brush with olive oil.
- Bake chicken in oven for 40 mins @ 180c until skin is crisp.
- Serve with garden greens
